Step 1: prepare the zucchini.
Zucchini need to take a certain shape, those that look like barrels. Wash them properly, cut off the lids and take out the middle with the seeds. Salt the zucchini inside and place them in a baking dish.
Step 2: prepare the filling.
Finely chop the onion and garlic, grate the carrots, and rinse thoroughly.
Heat oil in a pan and fry onion, garlic and carrots in it until soft.
Add the meat and cook, stirring until it changes color, then add the chopped tomatoes (be sure to peel their skin). If the tomatoes are canned in their own juice, add a little juice as well.
Add rice, spices and broth immediately.
Mix everything well and cook over medium heat until the rice becomes a little softer, having absorbed most of the liquid.
Step 3: bake zucchini stuffed with minced meat and rice.
Fill the zucchini with the cooked filling. Mix the oil with water and pour to the bottom of the mold. Close on top with foil.
Bake stuffed zucchini in preheated 190 degrees oven for 1,5 hour, then remove the foil and let it brown, returning to the oven for another 10-15 minutes.
Step 4: serve zucchini stuffed with minced meat and rice.
Serve stuffed with meat and rice hot, with bread and sour cream. Very tasty, I recommend to try!
