Bring the water to a boil, add salt, black pepper, bay leaf and spices to your taste. Stir, boil for 2-3 minutes until the salt is completely dissolved. Cool the water completely and lower the meat into it. Water should completely cover the meat. Cover with foil and refrigerate for at least 3 hours, at night. Remove the meat, dry, lightly salt, pepper, grate with spices. Make cuts and place peeled and chopped garlic. Preheat the oven to 190 degrees. Place the meat in a baking sleeve, put a bay leaf of marinade on top.
Close the sleeve with special ribbons or thread, make 3-4 holes in the sleeve so that the steam can freely escape and the sleeve does not burst. Bake for about 1 hour in a preheated oven. After an hour, you can cut off the top of the sleeve so that the boiled pork is browned and bake for another 15 minutes.
