The rice was boiled in salted water, then allowed to cool. Mix the chopped pepper, onion, rice and cherry tomatoes cut in half. We clean and cut the avocado slices and add it and the well-drained red beans. Chop the mint and coriander chiffon leaves and add them at the last minute.

We add in the blender all the ingredients necessary for the dressing and we blend until we obtain the desired consistency. Taste and if necessary, add salt, pepper or lemon juice. We add the greens and we can arrange the plate as in the pictures below or as you see fit. The recipe is made very quickly, only we have to boil the rice and beans in advance and it lasts.

Raw chocolate mousse

I am not a great specialist in sweets, nor a great amateur. But I like to enjoy an intense, bitter chocolate, a milk chocolate and many hazelnuts, or a soft chocolate fresh out of the oven. I had a craving for a Caprese salad, but since I didn't have mozzarella pearls I improvised and I did it Avocado and Cheese Salad.
